At this point there is no documentation describing the roles and responsibilities of AUXOP proctors, since they tend to vary District by District (AUXOP proctors "report" to the Directors of Auxiliary). Because they report into a District authority, they tend to have a unique "flavor" in terms of selection, assignment to duty, travel, etc.
Overall, they are responsible for the integrity of AUXOP test-taking, ensuring that closed book tests are really "closed book" and the individual receiving course credit is the individual that took the exam.
